Valeriy Shevchuk, Chief Technologist at Nemiroff, is the person behind the creation of every product. He is the custodian of the brand’s DNA, knowing what can be refined and what must remain unchanged forever.

In this interview, you will discover how the brand’s recipes are created and refined, and how their authenticity is preserved across different markets. We also discuss the balance between technological innovation, long-standing traditions and consistently high product quality.

Question
How does the Chief Technologist influence production at Nemiroff?

If you imagine production as an orchestra, the role of the Chief Technologist can be compared to that of a conductor. The conductor does not create the music from scratch, but knows exactly how each instrument should sound to produce a perfect symphony. My primary responsibility is to transform the recipe — the brand’s ‘musical score’ — into a clear sequence of actions.
I determine which raw materials are required, how they should be processed and which control parameters must be established at every stage. Unlike winemaking, where the harvest is influenced by the weather, our result must be flawless every single time. As the Chief Technologist representing the Nemiroff distillery, I ensure that the thousandth bottle produced today is identical to the very first one made many years ago.

Why do vodka connoisseurs around the world choose your brand?

True quality begins at the very start of the production chain — with the selection of raw materials. Every ingredient matters in Nemiroff vodka, as it is their combination that creates the product’s unique flavour profile.

Question
Does the water used to create the product matter?

Yes, it is extremely important. Water is the foundation of every vodka, and in our case, it is not simply water but artesian water sourced from our own wells. Its stable mineral composition, unaffected by the season or the amount of rainfall, is perhaps its most important characteristic. This is the first step towards ensuring the consistency of Nemiroff’s flavour.

How is the water purified before it is blended with the spirit?

Before entering production, the water undergoes a comprehensive preparation process that includes mechanical purification, softening and a cascade filtration system. We monitor its parameters just as carefully as those of the spirit because the water is responsible for the smoothness and fullness of flavour that characterise Nemiroff products.

Does the spirit also undergo purification?

Nemiroff products are made using high-quality Lux-grade grain spirit. However, even this requires additional purification if we are to achieve a truly exceptional product. This is where Nemiroff’s proprietary filtration technology comes into play.
We do not distil the finished vodka. Instead, we use a powerful multi-stage filtration system. The process can be compared to polishing a precious stone: each successive layer of filters removes increasingly minute impurities until the spirit reaches an exceptional level of purity. This approach allows us to preserve the lightness and natural purity of the flavour.

Which technologies help you achieve the ideal flavour characteristics of vodka?

Filtration at the Nemiroff distillery can be viewed as a philosophy of purification. We use a cascade of different technologies, each performing its own specific function. Let me explain each of these technologies in greater detail.
The process can be broadly divided into three key stages: charcoal filtration, silver filtration and polishing filtration. This multi-stage system lies at the heart of Nemiroff’s production process, ensuring both purity and consistent quality.

Does the distillery have a system for checking the quality of the vodka before it reaches shop shelves?

Every batch of Nemiroff vodka undergoes a mandatory organoleptic assessment. Our sensory panel, comprising qualified tasters, evaluates the product according to key parameters: appearance, aroma, flavour and finish. They compare each new batch with a benchmark sample — the ‘gold standard’ of flavour that I have approved.
This is the most important element of our quality control. If the panel detects even the slightest deviation, the batch does not proceed until the cause has been identified and eliminated. This enables us to ensure that every bottle delivers the authentic and consistent taste of Nemiroff.

What does ‘flavour consistency’ mean, and how exactly is it measured?

Consistency is not an abstract concept. It is a combination of specific indicators that can be measured and analysed. As Chief Technologist, I can confirm that we have a clearly defined system — and I am ready to lift the curtain on how it works.
Nemiroff’s quality control is based on three pillars: sensory panels, laboratory indicators and retention tests, also known as storage tests. This three-tier system ensures what we call the consistency of Nemiroff’s flavour.

What process leads to an adjustment being made to a product’s recipe?

Any change to a Nemiroff recipe results from a multi-level analysis. The process begins with our team collecting data, including feedback from partners across different markets, consumer trends and the findings of our internal sensory panel. However, compliance with the brand’s own quality standards has always remained the primary criterion.
Together with the team, we examine whether a process can be improved while preserving the product’s DNA. For example, a change may involve refining the filtration method to achieve even greater purity or enhancing the infusion method used for natural ingredients. Every idea undergoes rigorous testing in the laboratory and on the production lines before it can be approved.

How do you maintain your success without abandoning tradition?

The secret behind the success of Ukrainian Nemiroff vodka on the global market lies precisely in this balance. Tradition is our foundation: the classic recipes that made the brand famous, our commitment to using natural ingredients and our respect for centuries of expertise. We do not change the flavour of the legendary Honey Pepper to follow trends. Instead, we refine Nemiroff’s filtration technologies to make its flavour even purer and more consistent.

How do you adapt to each market, country and its consumers’ specific preferences?

Our approach to adaptation is different from the conventional one. Nemiroff’s core recipes are not changed to suit the tastes of individual countries. The DNA of our brand lies in its authenticity, and we are confident in its value worldwide. Our adaptations are usually reflected in details that demonstrate respect for consumers and local legislation.

How do you adapt Nemiroff’s recipes for the United Kingdom and EU countries, given their strict product requirements?

Nemiroff’s production team carefully monitors requirements relating to labelling, the content of specific substances and quality control. We therefore ensure that every bottle reaching the shelf fully complies with these regulations. This may involve the label format, the language used in the product description or additional nutritional information. We adapt the communication and documentation rather than the flavour, leaving the product itself unchanged.

Question
How do you adapt Nemiroff’s recipes for the American and Asian markets?

Alcohol consumption traditions differ in these markets, so we focus on how our product is presented. We research which cocktails are popular in each region, explore the best ways to serve vodka and provide our partners with relevant recommendations.
Sometimes the adaptation of Nemiroff products can be extremely subtle yet important. For example, it may involve particularly rigorous checks of label print quality or closure reliability to ensure the product withstands extended transportation.

Together with my team, I plan to continue refining our production processes without changing the DNA of our products. My guiding principle remains unchanged: consumers in any country should be able to open a bottle of Nemiroff and experience the same authentic flavour and consistently high quality.
