If you imagine production as an orchestra, then the chief technologist is its conductor. He does not create music from scratch, but he knows exactly how each instrument should sound to create a perfect symphony. The main task is to transform the recipe, the brand’s ‘musical score,’ into a clear algorithm of actions. I determine what raw materials are needed, how to process them, and set control parameters at each stage. Unlike winemaking, where the harvest is dictated by the weather, here the result must be perfect every time. As the chief technologist at the Nemiroff factory I guarantee that the thousandth bottle today will be the same as the first one produced years ago.

How decisions about changes are made (sensory analysis, market feedback, standards)

Valery, it would be equally interesting to learn what sequence of actions leads to the adjustment of a product’s recipe.

Any change in the Nemiroff recipe is the result of multi-level analysis. The process begins with data collection: feedback from partners in different markets, consumption trends, and the results of the internal sensory panel. But the main criterion has always been compliance with the brand’s own quality requirements.With the team we analyse whether the process can be improved while preserving the DNA of the product. For example, a change may involve a filtration method for even greater purity or an improvement in the method of infusing natural ingredients. Valery, does the water used to make the product matter?

Water is the basis of any vodka, and in our case, it is not just water, but artesian water from our own wells. A stable mineral composition that does not depend on the season or precipitation is perhaps the most important characteristic. This is the first step in ensuring the stability of Nemiroff’s taste. Before entering production, the water undergoes comprehensive preparation: mechanical purification, softening, and a cascade of filtration. We control its parameters as carefully as we do the alcohol because it is the water that is ‘responsible’ for the softness and fullness of the taste that Nemiroff products acquire.

As chief technologist, could you tell us more about alcohol purification?

The basis of Nemiroff products is high-quality grain alcohol of the ‘Lux’ class. But even the best alcohol needs additional purification to achieve perfection. This is where Nemiroff’s filtration technology comes to the fore. We do not use distillation for the finished vodka, but instead we use a powerful multi-stage filtration system. This process can be compared to polishing a precious stone, where each successive layer of filters removes smaller and smaller impurities until the spirit reaches an incredible level of purity. This approach allows us to preserve the lightness and natural purity of the taste, avoiding the addition of unnecessary aromas or foreign flavours.

What technologies help you achieve ideal taste qualities?

Filtration at the Nemiroff distillery can be compared to a purification philosophy. We use a cascade of different technologies, each of which performs its own specific function.

Carbon, silver and polishing filtration

The process can be divided into three key stages:

1. Carbon filtration. This is the first, basic level of purification. Activated carbon filters, like magnets, attract and retain organic impurities, residual aromas and colourants. This stage lays the foundation for purity.

2. Silver filtration. This is not only a purification stage, but also an improvement stage. Silver ions have a noticeable effect on organoleptic properties. That is, they help smooth out the flavour profile, making it softer and rounder. This is a subtle work with the texture of the drink.

3. Polishing filtration. The final touch. This is the most delicate purification using special filters that remove microscopic particles. It is after this stage that vodka acquires its crystal clarity and the very ‘silkiness’ for which it is valued.

Batch control and organoleptic testing

You should also understand that every batch of Nemiroff vodka undergoes mandatory organoleptic testing, notes Valery. Our sensory panel, qualified tasters, evaluate the product according to key parameters: appearance, aroma, taste, and aftertaste. They compare the new batch with the reference sample – the ‘gold standard’ of taste, approved by the chief technologist. This is the most important element of quality control. If the panel detects even the slightest deviation, the batch is not released until the causes are found and eliminated. Our adaptation philosophy differs from the usual approach. We do not change the basic recipe of the product to suit the tastes of individual countries. Instead, our adaptation is reflected in details that demonstrate respect for the consumer and legislation.

What about the American and Asian markets?

Alcohol consumption traditions differ in these markets, that is why we focus on how to present our product. – Sensory panels: As I’ve already mentioned, this is a subjective but extremely important assessment by qualified specialists. They are a ‘living tool’ that senses what no machine can.

– Laboratory indicators: Chromatography, spectrophotometry, and metal content analysis provide objective data. We regularly test our products for dozens of parameters to ensure chemical purity and stability of composition.

– Retention tests (storage tests): We simulate long-term storage of products in different conditions (at different temperatures and lighting). We then analyse how the taste, aroma and appearance change over time. This allows us to predict the shelf life and guarantee quality even years after production.
